Wirra Wirra The Angelus Cabernet Sauvignon takes the name of the three quarter tonne Angelus Bell that sits atop the winery's cellar, rung to announce the beginning and end of each vintage.
The Angelus is crafted from only exceptional old vine McLaren Vale fruit. Small parcels are fermented separately to maintain their unique vineyard character.
Each batch is tasted twice daily to determine the level of hand plunging and maceration required. The ferments are basket pressed, settled in tank and transferred to French oak to complete malolactic fermentation.
Following typically 18 months of maturation, during which the wine is racked and returned, only the most outstanding barrels are blended. The wine is filtered prior to bottling.
Deep red, Wirra Wirra The Angelus Cabernet Sauvignon has a ripe core of red and black fruit with earthy notes, a bright line of acidity and fine, firm tannins. Cellaring potential is 20 years.
